This recipe is from one of my customers who used our Mexican Fiesta Dip mix and viola! Her children love these and request them often. For best results use fresh produce from Carousel Watergardens Farm.
- 2 pkg. of Cathy’s Tasty Treats Mexican Fiesta Dip Mix
- 1 lb. Ground beef
- 1 pkg of soft or hard taco shells
- 1 c diced candy onions from Carousel Watergardens Farm
- 1 c diced Brandywine tomatoes from Carousel Watergardens Farm
- 1 c shredded lettuce
- 1 c diced green onions tops or chives
- 1 c shredded cheddar cheese
- 1 c sour cream
- 1 c mayonnaise
In small bowl mix one pkg of Cathy’s Tasty Treats Mexican Fiesta Dip mix with sour cream and mayonnaise blend well and chill for an hour.
In skillet brown ground beef drain. Add 1 pkg of Cathy’s Tasty Treats Mexican Fiesta dip to cooked beef, salt and pepper to taste, stir and keep warm.
Lay out soft taco shells fill with beef mixture, sprinkle with lettuce, onions, tomatoes, and cheddar cheese, garnish with Mexican Fiesta dip mix. Serve and enjoy! Makes about 6-8 tacos.
