Spinach Goat Feta Cheese Enchiladas

  • 24 oz plain goat feta cheese
  • 10 tortillas
  • 10 oz. fresh spinach
  • 10 oz. salsa
  • salt and pepper to taste

Spread 2 to 3 oz. Feta Cheeseon each tortilla then add 1 to 2 oz. each spinach and salsa. Salt and pepper to taste. Heat in the microwave for 4 minutes on high. Turn plate and heat again on high to be sure that all the cheese has softened.

Join us for a festive atmosphere featuring the Timbre Wolves of Columbus, Ohio

an acoustic band playing “old-time” music. Featuring Carl Yaffey (banjo), John Sherman (fiddle, mandolin), Andy Verhoff (guitar), Sid Omasta (fiddle, mandolin) and Pam Spence (bohdran).

Have a seat, chat with friends  and enjoy a sense of community. Our hospitality area will be open with fine coffees, teas and beverages.

Mojo Marinade

Mojo Marinade from Frijolito Farm

This marinate is inspired by Cuban-American cuisine and will take your chicken to then next level.  It works great for grilled chicken or oven roasted pieces.

1 cup fresh squeezed orange juice (or in lieu of the orange juice & lime: sour orange)
1/2 cup fresh squeezed lime juice
5 oz yellow onion, 1/4″ diced
2 tbl garlic, minced
1/2 tsp cumin, ground
1 tbl oregano, fresh, chopped
1/2 tsp black pepper, ground
1 tsp salt
3 tbl cilantro, fresh, chopped
1 cup olive oil

Mix all ingredients. Pour mixture into a bowl or a plastic freezer bag with chicken. Set in refrigerator and allow marinade to soak in overnight. If grilling or roasting, you can use leftover marinade to baste the chicken. Make sure any marinade added during cooking gets throughly cooked. To avoid risk from bacteria, discard leftover marinade.
